Crunchy pieces of potato slowly cooked until crisp with a great Parmesan cheese flavour that make the perfect side to barbecued chicken or steak.


Serves: 4 

  • 3 to 4 large potatoes
  • 1 tablespoon fresh diced parsley
  • 2 tablespoons grated Parmesan cheese
  • salt and pepper, to taste
  • oil, for cooking

  1. Wash, peel and dice potatoes into 2cm cubes.
  2. Place into microwave for 5 minutes until tender. This helps cook the potato thoroughly.
  3. In a frying pan on medium heat add a thin layer of oil and then the potato.
  4. After a few minutes add the Parmesan cheese and give a gentle stir.
  5. Add the salt and pepper.
  6. Fry for a few more minutes and then add the parsley giving another gentle stir.
