Easy Orange Surprise Muffins

Nice orange flavour with a hint of spice and surprise; there is jam in the middle. These are a family tradition for morning tea.

Ingredients
Serves: 6
- 2 cups (250g) self raising flour
- 1/2 cup (125g) sugar
- 1 teaspoon mixed spice
- 1 orange, juiced and zested
- 1/2 cup (125ml) milk
- 1 egg, lightly whisked
- 1 teaspoon vanilla essence
- 60g butter, melted
- jam of your choice

- Combine flour, sugar, mixed spice and orange zest in one bowl. Combine egg, juice, vanilla essence and milk in another bowl. Have the melted butter ready to add in a cup.
- Pour the contents of the wet ingredients bowl into the dry ingredients bowl then add the melted butter.
- Mix lightly and quickly, some say no more than 12 stirs, then half fill muffin cases with mixture.
- Using 2 teaspoons, dig a shallow hole in the mix in each muffin case with one teaspoon and add a teaspoon of jam with the other.
- Fill each muffin case with the rest of the muffin mixture and bake at 200 degrees C for 20 minutes.
