Smoked Fish Soup

    A very tasty hearty soup that is quick and simple to make. Lots of vegetables, herbs, spices and of course smoked fish.

    Serves: 6 

    • 1/2 cup finely diced celery
    • 1/2 cup finely diced onion
    • 1 1/2 cups (375ml) salted water
    • 2 tablespoons butter
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon ground ginger
    • 2 tablespoons flour
    • 1/2 teaspoon dry mustard
    • 1 cup (250ml) milk
    • 1/2 cup grated cheese
    • 1 (400g) tin diced tomatoes, drained
    • 1/2 cup (125ml) creamed corn
    • 250g smoked flaked fish
    • parsley

    1. Simmer celery and onion in the salted water until tender. Keep liquid.
    2. Melt butter in large saucepan and stir in flour, pepper, ginger and mustard until bubbly.
    3. Gradually blend in milk and bring to a simmer.
    4. Add cheese and stir to melt.
    5. Add tomato, celery, onion and their liquid then stir.
    6. Lastly add corn and fish. Stir over gentle heat until very hot.
    7. Serve with lots of parsley
