Stuffed zucchini is a fabulous and easy to make dish that will please the taste buds. The bigger the zucchini the better or use a couple of smaller ones.


Serves: 2 

  • 1 large zucchini
  • 1 (400g) tin apricots, finely diced
  • breadcrumbs, as required
  • 2 sausages
  • 3 tablespoons mixed herbs
  • 1 clove garlic, diced

Preparation:15min  ›  Cook:45min  ›  Ready in:1hour 

  1. Cut the zucchini in half longways and remove seeds.
  2. In a medium bowl mix the apricots, sausage meat, mixed herbs and garlic. Add the breadcrumbs as required to get good stuffing consistency.
  3. Place spoonfuls of stuffing into the zucchini then wrap with foil.
  4. Place in the oven for about 45 minutes at 180 degrees C.
