    This is a really easy carrot cake that takes almost no time at all to prepare. I love in for afternoon tea and for picnics.

    Ingredients
    Serves: 12 

    • Cake
    • 4 eggs
    • 2 cups (440g) white sugar
    • 1 cup (250ml) oil
    • 2 cups (250g) plain flour, sifted
    • 2 teaspoons bicarb soda
    • 2 teaspoons salt
    • 1 teaspoon cinnamon
    • 3 packed cups grated carrot
    • Icing
    • 225g cream cheese
    • 1 teaspoon vanilla
    • 100g butter
    • 1 1/4 cups (220g) icing sugar

    Directions
    Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Cake: Beat eggs, add sugar and oil.
    2. Stir in flour, bicarb soda, salt and cinnamon. Add carrot and mix.
    3. Bake 40-50 minutes at 180 degrees C or until it tests done.
    4. Icing: Mix all the icing ingredients together and ice the cooled carrot cake.

    great recipe very easy i made cupcakes instead of one cake so i can freeze i just cut the cooking time to 20 mins . makes over 30 cupcakes havent finshed yet lol - 15 May 2012
