Spiced Apricot Crumble

The crumble mixture for this recipe creates a base as well as the top. I prefer to use fresh apricots but when out of season I am known to use tinned apricots.

Serves: 8 

  • 8 cups coarsely diced apricots, fresh or tinned
  • 3 tablespoons lemon juice
  • 4 cups (325g) rolled oats
  • 1/2 cup (120g) brown sugar
  • 120g butter or margarine
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/4 cup water
  • 1/2 cup (125ml) thickened cream, whipped, optional

Preparation:15min  ›  Cook:35min  ›  Ready in:50min 

  1. Preheat oven to 180 degrees C.
  2. Toss the apricots with the lemon juice and set aside.
  3. Mix together the oats, sugar, butter, cinnamon, cloves and nutmeg until crumbly.
  4. Set 2 cups of the mixture aside. In the remaining mixture add the water and mix well. Pat this mixture into a greased 23x33cm baking tin.
  5. Spread base evenly with apricots and top with reserved crumble mixture.
  6. Bake for 35 to 40 minutes until top is lightly browned.
  7. Serve hot with the whipped cream.

I made this last night and I am sorry to say it was awful. Way too many apricots and the oats killed it. The cinnamon, cloves and nutmeg was nice. - 18 Dec 2011

I made this and enjoyed it very much. a simple and healthy dessert. I skipped using the oat mix for the base and just sprinkled on top, worked fine. - 04 Jan 2014
