When hot put in the rice and stir well to coat grains to avoid sticking.
Add garlic, ginger, soy sauce and pepper then stir to combine. (It is important you are stirring all the time as rice heats up very quickly and will stick easily it should take you literally 3 minutes max from putting the rice into the wok to taking it out to serve.)
I added the kitchen sink to this.....leftover vegis and chicken. Stir fried in peanut oil with a dash of sesame oil too. Tip....always use chilled cooked rice for fried rice for great texture without the stickiness. - 04 May 2013
