Bacon Potato Salad

    The simple flavours of this potato salad really shine through. A great addition to a buffet table or barbecue.

    Serves: 8 

    • 2 kg potatoes
    • 2 vegetable stock-cubes
    • 8 rashers smoked bacon
    • 300ml mayonnaise
    • 2 tablespoons favourite herb like dill, mint or chives
    • salt and pepper, to taste

    1. Peel and cube the potatoes then boil in the water with the stock-cube until tender. Drain from hot water and place in cold water to cool. Then place in the fridge.
    2. Grill bacon until brown then dice into small pieces. Then place in the fridge.
    3. When potatoes and bacon are cold, place into a large serving bowl and stir in the mayonnaise, herbs, salt and pepper through gently.
    4. Refrigerate until needed.
