    Simple recipe for a great potato salad for a picnic or barbecue. Make sure the potatoes are not cooked too soft. I find this potato salad is better at room temperature but you can make it beforehand and store it in the fridge.

    Serves: 16 

    • 2kg washed potatoes cubed into 2cm pieces
    • Salt to taste
    • ¾ (200ml) cup French salad dressing
    • 4 stalks celery, chopped
    • 6 spring onions, diced
    • 1¼ cups (310 ml) whole egg mayonnaise
    • 1 cup (250ml) sour cream
    • 3 tsp wholegrain mustard
    • ½ cup fresh mint leaves, chopped
    • ½ cup dill, chopped
    • Ground black pepper

    Preparation:20min  ›  Cook:30min  ›  Ready in:50min 

    1. Bring a large pot of water to the boil and add salt and potatoes and cook till potatoes are done but will still hold their shape when pierced with a fork.
    2. Drain the potatoes well then place into a serving bowl and pour the salad dressing over. Let cool for at least 1 hour
    3. Mix all other ingredients together and add to the potatoes.
