Healthy Chicken Tacos

    This is a quick and healthy recipe for chicken tacos, it uses chicken breasts, baked beans and taco seasoning and is served with fresh salad and sour cream.

    Serves: 4 

    • 1 chicken breast
    • fresh cracked pepper, to taste
    • 2-3 tablespoons olive oil
    • 1 (400g) tin baked beans
    • 1 packet taco seasoning
    • lettuce, to serve
    • dices tomatoes, to serve
    • salsa, to serve
    • low fat sour cream, to serve

    1. Season chicken on both sides with a good amount of fresh cracked pepper.
    2. Heat a large frypan with olive oil.
    3. Cook chicken on both sides making sure they are nice crisp on each side. Cover the frypan to speed up cooking time.
    4. When chicken is cooked; not overcooked but no longer pink remove and set aside.
    5. Add the tin of beans to the frypan with half of the taco seasoning packet and half a tin of water. Adjust seasonings to taste.
    6. Shred chicken after letting it cool for at least 5 minutes then return to frypan.
    7. Heat and let simmer until thickened up.
    8. Serve in crunchy taco shells fresh from the oven. Top with lettuce, tomato, salsa and sour cream.
