Easy Vegan Peanut Butter Fudge

    Peanut butter fudge with lower calories and easy ingredients from your cupboards. You would never guess it was so healthy or vegan.

    Serves: 20 

    • 2 cups (440g) white sugar
    • 1/2 cup (125ml) soy milk
    • 30g extra crunchy peanut butter
    • 1/2 teaspoon vanilla essence

    Preparation:15min  ›  Cook:5min  ›  Ready in:20min 

    1. Put sugar, milk and peanut butter into a saucepan. Heat on a low heat to melt the sugar. Make sure you stir it while the sugar is melting.
    2. Once the mixture is boiling do not stir it and wait around 4 minutes until the mixture forms a ball when a drop is dropped into cold water and flattens when you take it out of the water.
    3. Add the vanilla essence.
    4. Cool mixture slightly then beat the mixture until it thickens.
    5. Pour into a buttered tin or silicone pan and place in the fridge to set.
    6. Break into pieces when set.

    I've made this before and everyone loved it. This time, though, it came out tooth-achingly oversweet and you could barely taste the peanut butter. It was also very crumbly when I tried to cut it into squares. Will be looking for another recipe.  -  17 Aug 2015


    Very easy to make as far as fudge goes! Breaking the pieces apart when this set up was different, but fun! I have it packed up and ready to send as a gift!  -  13 May 2013
