Roast Potato Salad

This is a family recipe for potato salad which is tastes amazing. It makes a great side salad and is really easy to make.

Serves: 10 

  • 4kg potatoes
  • 5 tablespoons mayonnaise
  • 1/4 cup roasted pine nuts
  • 2 cup fresh spring onions, cut sliced
  • 1 cup sun dried tomatoes
  • 3 tablespoons basil pesto

Preparation:10min  ›  Cook:50min  ›  Ready in:1hour 

  1. Make sure the potatoes are thoroughly brushed and washed then cut them with the skin on into small 2cm pieces.
  2. Cover two small baking trays with a fine layer of olive oil then add the potatoes. Place in an oven for about 50 minutes on 180 degrees C.
  3. Cook until they are nice and roasted. Might need to swap the bottom tray with the top tray after 30 minutes to prevent the top ones from burning.
  4. Let the potatoes cool down overnight if possible.
  5. Mix all ingredients loosely together then refrigerate and serve when required.
