Dutch Beef Croquettes

    This is a traditional Dutch recipe passed on by my mother. It's time consuming but it makes a huge batch and you can freeze uncooked ones. These are great at parties or just pulled out of the freezer for a lazy night's dinner.

    Serves: 36 

    • 1 1/2 litres water
    • 750g mince
    • 4 beef cubes
    • 1 onion, diced and fried
    • 1 teaspoon curry
    • 1 teaspoon nutmeg
    • 1 teaspoon pepper
    • 1 tablespoon salt
    • 200g butter
    • 400g plain flour
    • 1 cup milk
    • 2 eggs
    • 1 tablespoon oil

    1. Place the water, mince, beef cubes, onion, curry, nutmeg, pepper and salt in a saucepan and boil for 30 minutes then set aside to cool.
    2. Melt butter then add flour slowly mixing together.
    3. Add flour mixture to the meat mixture. Blend together with a hand mixer. Allow to cool.
    4. Mix milk, eggs and oil together with a fork.
    5. Roll the cooled meat mixture into logs and roll in breadcrumbs.
    6. Dip logs into egg mixture then back into the breadcrumbs.
    7. Un-needed croquettes can be frozen at this point.
    8. Deep fry croquettes in hot (190 degrees C) oil for about 5 minutes or until golden brown and crunchy. Serve.
