Balsamic Dijon Salmon Fillets

    Salmon is covered in an easy to make glaze that combines balsamic vinegar, garlic, honey, white wine and Dijon mustard then is baked.

    Serves: 6 

    • 2 teaspoons olive oil
    • 4 cloves garlic, crushed
    • 1 tablespoon white wine
    • 1 tablespoon honey
    • 1/3 cup (80ml) balsamic vinegar
    • 2 teaspoons Dijon mustard
    • salt and freshly ground black pepper, to taste
    • 1 tablespoon chopped fresh oregano
    • 6 salmon fillets (approx 100g-140g each) with skin on

    1. Preheat oven to 200 degrees C. Line a baking tray with baking paper.
    2. Heat olive oil in a small saucepan over medium heat; add garlic and cook until soft, about 3 minutes. Mix in white wine, honey, balsamic vinegar, mustard, salt and pepper. Simmer, uncovered, for about 3 minutes, or until slightly thickened. Take off the heat and add oregano.
    3. Arrange salmon fillets skin side down on prepared baking tray. Brush fillets with balsamic glaze.
    4. Bake in preheated oven for 10 to 14 minutes, or until flesh flakes easily with a fork. Brush fillets with remaining glaze. Use a spatula to transfer fillets to serving platter, leaving the skin behind on the tray.


    Try serving these salmon fillets over a baby leaf salad, and use extra glaze for the dressing. Add chopped spring onions and julienned red capsicum to round out the salad.

    Used different ingredients. I followed the recipe the first time around and thought it was pretty good. When I make it now, I grate and add a little fresh ginger (1/4 to 1/2 tsp.) and a pinch of red capsicumflakes to the sauce. I marinate the fish in some of the sauce for 30 minutes. To bake it, I spray wire racks with cooking spray and place them onto a large baking sheet and bake the fish on the racks as directed, basting at least once during the cooking time.  -  29 Sep 2008


    YUMMO!!! so easy and had a great sweet taste with the honey. Though I glazed it twice in the oven with the remaining sauce. Served with saute'd vegies...mmmm  -  26 Jul 2012


    Used different ingredients. We made this after I found the same recipe in my low-carb cook book. The only think they add in it is to add chopped Basil before serving. Fantastic dish!!! Served it with brown rice and garlic sauteed green beans. Will make this again for sure...very easy!  -  29 Sep 2008
