Chocolate Drop Biscuits

    This is an easy recipe that uses both cocoa and melted milk chocolate to create a mild chocolate biscuit with a soft centre.

    Serves: 8 

    • 125g margarine
    • 3/4 cup (185g) white sugar
    • 2 eggs
    • 1 cup milk cooking chocolate, melted
    • 1 teaspoon vanilla essence
    • 2 cups (250g) plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup cocoa
    • 1/2 cup (125ml) milk, if needed

    1. Cream the margarine and sugar then add the eggs.
    2. Mix in the melted chocolate and vanilla.
    3. Combine the flour, baking powder, salt and cocoa then sift into wet mixture. Stir to make batter. If mixture is too stiff add milk.
    4. Drop by teaspoons onto a baking tray then cook 10 minutes at 175 degrees C or until slightly cracked on top. Will still be soft.
    5. Drizzle with melted chocolate.
