Sweet Chilli Tomato Sauce

    A bottled sweet chilli sauce that you can adjust to just how you like it by keeping or removing the chilli seeds.

    Serves: 32 

    • 100g birds eye chillies, halved
    • 100g long red chillies, halved
    • 2 cups (500ml) white vinegar
    • 2 cups (450g) sugar
    • 2 teaspoons salt
    • 2 (400g) tins diced tomatoes
    • 2 cups (500ml) tomato sauce
    • 2 cloves garlic, diced

    1. Remove the stalk from the chillies. Remove the seeds from half of the chillies for a milder sauce or keep them whole.
    2. Place the chillies, vinegar, sugar, salt, tomatoes and sauce in saucepan and simmer for 15 minutes.
    3. Add garlic and simmer for a further 5 minutes.
    4. Transfer to a in a blender. Process until a puree.
    5. Pour into sterilized bottles (makes about 8 200ml bottles).
