    These foolproof scones have only four ingredients and come together in minutes. Lemonade makes them extra light.

    Serves: 24 

    • 4 cups (500g) self rising flour
    • 300ml light cream
    • 200ml lemonade
    • 1/2 teaspoon salt

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 210 degrees C. Sift flour into a large bowl. Add salt, lemonade and cream then mix into soft dough using a knife.
    2. Turn onto a lightly floured bench and knead gently until the underneath surface is smooth. Turn the smooth surface to the top and gently press out to 2cm thickness. Cut to shape, using a scone cutter.
    3. Place on a warm greased oven tray and glaze top of scones with milk using a pastry brush. Bake 15 minutes or until golden brown. Serve warm or cold with jam and cream.

    Mine didn't rise much, anyone had this problem? Seem to taste ok though  -  10 May 2012


    Dazza-65 you have over mixed them, they need to just come together not be kneaded as such. That is the most common error that people make when making scones, overmixing.  -  10 Aug 2013
