Caramel Apple Pudding

    Apple wedges coated in a yummy homemade caramel sauce then baked in the oven with a creamy, dough topping.

    Serves: 6 

    • 4 granny smith apples, cored and quartered
    • 180g butter
    • 1/2 cup (125ml) honey
    • 1 cup (250ml) thickened cream
    • 1/3 cup (60g) brown sugar
    • 2 cups (250g) plain flour
    • 2 teaspoons baking powder
    • 1 egg
    • icing sugar, for dusting

    1. Preheat oven to 180 degrees C.
    2. Cut each apple quarter into 4 wedges.
    3. Heat a non-stick frypan over medium-high until hot.
    4. Add 2 teaspoons butter and half the apples.
    5. Cook, shaking the frypan often for 2 minutes or until the apples are light golden brown.
    6. Repeat with remaining apples and 2 teaspoons butter.
    7. Add 40g butter, 1/4 cup honey, 1/2 cup cream and 2 tablespoons of sugar to hot frypan.
    8. Cook stirring for 3 minutes or until sauce thickens.
    9. Return apples to the frypan and stir gently to coat in thick caramel sauce.
    10. Spoon apple mixture into a 5cm deep, 6 cup capacity ovenproof dish.
    11. Cut up the remaining 125g butter.
    12. Combine flour, baking powder, butter and 2 tablespoons of sugar in a food processor until mixture resembles coarse breadcrumbs then transfer to a bowl.
    13. Combine egg, 1/2 cup cream and 1/4 cup honey in a jug then beat until combined.
    14. Stir into flour mixture.
    15. Drop spoonfuls of the sticky dough mixture over apple mixture.
    16. Bake for 40 minutes.
    17. Dust with icing sugar and serve hot with cream, custard or ice cream.
