This is a simple Asian style salad that can be made as a main meal or as an appetiser. If you do not have the time to make the sauce your favourite store bought sauce can be substituted.


Serves: 4 

  • 1/2 cup (125ml) vegetable oil
  • 1 1/3 cups raw peanuts
  • 2 garlic cloves
  • 4 shallots or 1 small red onion
  • 1/2 teaspoon shrimp paste, toasted
  • 1 large red chilli, de-seeded
  • 2 birds eye chilli
  • 1 medium tomato
  • salt, to taste
  • 1 tablespoon palm sugar
  • 1 1/2 tablespoons kecap manis
  • 1/2 cup (125ml) water
  • 2 kaffir lime leaves, thinly sliced
  • lime juice, optional
  • Salad
  • 200g cabbage, largely diced
  • 150g snake beans, cut into 8cm pieces
  • 2 medium carrots cut in half then on an angle 4cm long
  • 1 cup cauliflower florets
  • 150g firm tofu, cut in cubes
  • 1/2 small iceberg
  • 2 hard boiled eggs, cut in quarters
  • 1 medium potato, boiled and sliced
  • 1/2 cup bean sprouts
  • 1 tablespoon fried shallots

  1. Satay Sauce: Heat oil in a wok over medium heat then fry peanuts until just golden; about 4 minutes. Remove with a slotted spoon then drain and cool.
  2. Pound peanuts in a mortar and pestle or grind the peanuts into a fine powder; set aside.
  3. Crush garlic, shallots, shrimp paste, chillies and tomato with a pinch of salt in a mortar and pestle or process in a small blender.
  4. Heat oil in wok and fry garlic mix for a minute or two then add palm sugar, kecap manis and water. Bring to a boil and add ground peanuts. Simmer stirring occasionally until sauce thickens.
  5. Add kaffir lime leaves and lime juice and extra salt to taste.
  6. Salad: In a large saucepan bring lightly salted water to the boil then blanch cabbage, beans, carrots and cauliflower separately; refresh in cold water. Do not overcook vegetables but keep them crunchy.
  7. Heat oil in a wok or frying pan and fry tofu until golden brown; drain and set aside.
  8. To Serve: Arrange lettuce around the edges of serving plate, pile the vegetables in the middle. Arrange eggs, potatoes, bean sprouts and tofu on top, dress with satay sauce and sprinkle with fried shallots.
