Hearty Beef and Vegetable Soup

    This is a family recipe for a hearty beef and vegetable soup. This recipe has been passed around my family for years and has just gotten better and better. This recipe serves at least 10 people but what I like to do is divide it up into containers and freeze it for winter lunches.

    Serves: 10 

    • 1 1/2 kg casserole steak, cubed
    • 2 1/2 litres beef stock
    • 2 1/2 litres vegetable stock
    • 2 cups soup mix, beans
    • 2 cups diced carrot
    • 2 cups diced parsnip
    • 2 cups diced turnip
    • 2 cups quartered onions
    • 2 cups sliced leek
    • 4 cups diced celery
    • 4 cups diced potato
    • 2 cups tomato paste
    • salt & pepper, to taste

    1. In a large saucepan bring to boil the beef and vegetable stocks. Once they have come to the boil add soup mix and cubed steak. Cover and leave to boil for 2 hours.
    2. After the meat has boiled for 2 hours add carrots, potato, turnip and parsnip then reduce heat, cover and leave to simmer for a further 1 hour. Stir occasionally.
    3. Add onion, leek and celery then cover and leave to simmer for a further 30 minutes. Stir occasionally.
    4. At this point the soup should become thick. Add tomato paste and stir through. Season with salt and pepper to taste.
    5. On a low heat leave to simmer for a final 1 1/2 hours.
