    Easy sweet and savoury rice snacks for mid-afternoon nibbles. Perfect for leftover rice. I even use them on picnics.

    Serves: 4 

    • 1/2 cup walnuts
    • 2 cups cooked rice
    • 1/2 cup sultanas
    • 50g poppy seeds

    Preparation:20min  ›  Cook:10min  ›  Extra time:2hours chilling  ›  Ready in:2hours30min 

    1. Chop walnuts roughly and stir through hot rice.
    2. Allow to cool slightly then stir in sultanas.
    3. Cool completely. Take handfuls of the mixture and work into balls by patting down sides rather than rolling over the palm of your hand.
    4. Roll balls through poppy seeds to coat evenly.
    5. Refrigerate for at least two hours to set.
