This is a delicious spicy warm cheese dip with bacon and spring onions; it makes a perfect entree when entertaining.


Serves: 8 

  • 4 rashers bacon, sliced into thin strips
  • 1/4 cup spring onions, sliced
  • 250g softened cream cheese
  • 1/2 cup cottage cheese
  • 1 cup grated cheddar cheese
  • 1/4 cup finely diced pickled jalapenos, to taste
  • 2 teaspoons fresh minced red chilli or to taste

  1. In a saucepan over a medium heat fry the bacon and spring onions until the bacon is cooked.
  2. In a medium bowl blend the cream cheese, cottage cheese and cheddar cheese until really well combined.
  3. Add the bacon and spring onions, diced jalapenos and chilli then mix well.
  4. Spoon into a small baking dish and cover.
  5. Cook at 180 degrees C for 10 minutes.
  6. Uncover the dish then stir the dip and continue to bake for another 10 minutes.
  7. Serve while warm with corn chips, crackers or vegetable crudités.
