Chapel Chook

    This chicken and apricot recipe was created for Macquarie Chapel in Eastwood, Sydney which serves free meals to the homeless and hard up. Breathe in the aroma while it's cooking to remind yourself that you're alive and ok! If you don't have a sweet tooth you can omit the marzipan.

    Serves: 4 

    • 1/3 cup olive oil
    • 1 large onion, diced
    • 1 clove garlic, crushed
    • 1 teaspoon ginger, chopped or grated
    • 1 tablespoon marjoram leaves
    • 1 tablespoon tarragon leaves
    • 1 tablespoon dill leaf tips
    • 500g chicken mince
    • 250g marzipan (optional)
    • 200g apricot puree

    1. Heat the olive oil in large frying pan on medium high and fry the onion, garlic, ginger and herbs, stirring for two minutes. Add the chicken and fry for seven minutes, breaking up clumps if they form. Add marzipan (if using) and apricot.
    2. Cover, turn down to low heat and simmer for 10-12 minutes till the mince is cooked.

    This sounded an interesting mix of flavours, but the quantities of the ingredients seem a bit off - 500g of chicken feeds 34???? Loaves and fishes indeed! Way too much oil, and the amount of marzipan sounds excessive for that quantity of chicken. I used a sprinkling of dried mixed herbs as I didn't have fresh available, and added a cup of chicken stock and apricot pieces in place of the puree, thickened with 2 tbsp of ground almonds; and served it over rice. This was very nice, but needs fine-tuning a bit more to get the balance of flavours right.  -  29 Nov 2014
