Chocolate fans will love this chocolate mud cake, I know I do. It is easy to make with only a few ingredients, the coffee gives the chocolate a deeper flavour.


Serves: 8 

  • 1 tablespoon coffee
  • 250g butter
  • 2 cups (340g) brown sugar
  • 250g dark cooking chocolate, diced
  • 2 eggs
  • 1/2 cup (60g) plain flour
  • 1/4 cup (30g) self-raising flour
  • 1/4 cup (30g) cocoa

  1. Preheat the oven to 150 degree C.
  2. Place the coffee, butter, brown sugar and chocolate in a saucepan. Stir over a low heat until the sugar dissolves and the chocolate melts.
  3. Pour into a mixing bowl and allow to cool to room temperature.
  4. Add the eggs and beat well. Sift the dry ingredients and add. Mix well.
  5. Pour the batter into a greased and lined 28x18cm cake tin.
  6. Bake at 150 degrees C for 1 hour or until a skewer inserted in the cake comes out cleanly.
  7. Allow to cool in the tin. Dust with icing sugar to serve.
