I love these biscuits. I use melts rather than chocolate chips. Serve this up to the family and you will all eat in peace.

Serves: 20 

  • 185g butter
  • 185g copha
  • 1 cup (155g) brown sugar
  • 1/2 cup (125g) white sugar
  • 4 tablespoons milk
  • 2 tablespoons vanilla essence
  • 2 eggs
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons salt (if using unsalted butter)
  • 3 1/2 cups (435g) self raising flour
  • 1 cup milk chocolate melts
  • 1 cup white chocolate melts

Preparation:30min  ›  Cook:15min  ›  Ready in:45min 

  1. Combine butter, copha, brown sugar and white sugar until smooth consistency.
  2. Add in milk and vanilla then blend.
  3. Add in eggs and blend until fluffy.
  4. Sift all dry ingredients into mixture and combine until it is smooth.
  5. Blend in melts with a wooden spoon.
  6. Let batter sit for about 10 minutes and it will begin to thicken.
  7. Put biscuit dough in rounded quarter cup drops on a baking tray.
  8. Cook for 12 minutes at 150 degrees C until light brown. Let cool completely before serving.
