Sultana and Raisin Cake

    It is a fruit cake that my Mother created many years ago and passed the recipe on to me, it is almost fail-proof....but like the old cakes, it contains lard. You could use butter/marg instead.

    Serves: 12 

    • 250g dark brown sugar
    • 125g butter
    • 125g lard
    • 2 large eggs
    • 500g SR flour
    • 375g currants
    • 375g sultanas
    • 1/2 cup (125ml) milk
    • 1/2 teaspoon grated nutmeg

    1. Blend sugar, butter and lard together until a creamy texture then add the eggs.
    2. Add the currants and sultanas.
    3. Add the flour and grated nutmeg, mix then add the milk.
    4. Combine all ingredients together until it for a nice soft texture.
    5. Place mixture into a 18cm round cake tin.
    6. Cook in a preheated oven at 160 degrees C for 90 minutes.
