Sweet Lentil Bread

The ingredients may look bizzare, but try it! This loaf is absolutely delicious with tea or coffee and is a family favourite treat.

Serves: 10 

  • 3/4 cup brown lentils
  • 2 tablespoons mustard seeds
  • 2 tablespoons sesame seeds
  • 1/4 cup melted butter
  • 1 cup (220g) white sugar
  • 2 eggs, whisked
  • 1 1/2 cups (185g) plain flour
  • 3/4 cup desiccated coconut
  • 1 teaspoon bicarb soda
  • 1 pinch salt, to taste
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon baking powder

  1. Simmer lentils in 3 cups water until tender. Drain and cool.
  2. In a large frying pan cook mustard seeds and sesame seeds over a medium heat until sesame seeds are lightly browned.
  3. In a large bowl combine melted butter, sugar and eggs. Stir in lentils.
  4. In a separate bowl combine sifted flour, coconut, bicarb soda, salt, curry powder, baking powder and half of seed mixture. Stir into lentil mixture.
  5. Pour batter into a greased loaf tin and sprinkle with remaining seeds.
  6. Bake at 180 degrees C for around 1 hour or until toothpick comes out clean.

I altered this for family preferences. I changed the flour to 1 cup of spelt flour and 1/2 cup of brown rice flour, then used 1/2 cup honey in place of the sugar. I tf you cut it when cooled, it does not crumble as much as when it is hot. The taste and texture are wonderful! - 06 May 2013
