Spinach and Potato Pie

A delicious and easy weeknight dinner. Mashed potato and steamed spinach is topped with pastry. Good and filling meat free dinner.


Serves: 6 

  • 1 sheet puff pastry
  • 3 large potatoes
  • 2 tablespoons milk
  • 1 teaspoon butter
  • salt and pepper, to taste
  • 1 bunch spinach or silver beet
  • 2 garlic cloves, crushed
  • 1 brown onion, finely diced
  • 1 cup grated cheddar or tasty cheese

  1. Preheat oven to 200 degrees C. Grease a medium sized pie dish.
  2. Peel and cube the potatoes and boil until soft enough to mash with butter, milk salt and pepper.
  3. While potatoes are cooking, roughly cut or tear the spinach leaves and steam for 2 minutes or until the leaves begin to wilt. Squeeze out any excess moisture and leave in a colander.
  4. In a medium sized bowl mix the mashed potato, spinach, garlic and onion. Place half of this mixture in the pie dish, top with half of cheese and repeat.
  5. Top pie with puff pastry and bake for 30 minutes or until the pie top is brown.
