    This cake is best served the next day when all the chocolate in it has had a chance to reset and it becomes a rich, dense, stick-to-the-roof-of-your-mouth cake. Delicious warmed and served with ice cream or double cream.

    Ingredients
    Serves: 10 

    • 120g butter, cubed
    • 150g dark chocolate, diced
    • 2/3 cup (150ml) water
    • 1/4 cup (30g) cocoa
    • 1 cup (220g) caster sugar
    • 1 egg, lightly whisked
    • 3/4 cup (90g) self raising flour, sifted
    • 1/2 cup (60g) plain flour, sifted

    Directions

    1. Preheat oven to 160 degrees C and line a deep 23cm cake tin.
    2. Place butter, chocolate, water, cocoa and sugar in a medium saucepan then stir over low heat until butter and chocolate have melted and the sugar has dissolved.
    3. Let cool for 20 minutes or until it is close to room temperature.
    4. Gently stir in egg and flours until combined.
    5. Pour mixture into prepared cake tin and bake for approximately 50 minutes or until a skewer comes out clean when inserted into the middle.
    6. Let cool in tin for 10 minutes before turning onto a cake rack to cool completely.

    I made this cake 2 days ago. I would say the description of the cake is false. it is not rich dense and stick to the roof of your mouth cake which i was quite disappointed about. The cake turned out moist, it tasted better two days ago than it did on the first day. its very light and crumbly. I dusted it with cocoa powder on the top as i thought it was missing something. I heated it up as suggested after the first day and although it was warm it tasted much better at room temperature. overall its still a really nice cake and i would make it again.     Was such an easy cake to make. I made it the day before and put chocolate frosting on it. It was very moist and a nice light cake. Everyone loved it - 25 Aug 2013
