Creamy Bacon Spaghetti

    This was something I threw together one night and has become a favourite; it combines bacon and cream cheese to make a rich and satisfying sauce.

    Serves: 2 

    • 200g spaghetti
    • 1 small brown onion, sliced
    • 2 rashers bacon, cut in thin strips
    • 100g cream cheese
    • 100ml milk
    • dry ginger ale
    • salt and pepper, to taste
    • 1 pinch oregano, to taste
    • 2 medium sized mushrooms sliced
    • 1 clove garlic

    1. Put spaghetti on to boil (using as much as you feel like eating).
    2. Fry onion in frypan with bacon (the fat from the bacon can grease the frypan so there is no need for oil).
    3. Heat cream cheese and milk in the microwave and stir together.
    4. Once onions are translucent add ginger ale and allow to simmer rapidly.
    5. Add the cream cheese mix and season with salt, pepper and oregano. Simmer for 5 minutes.
    6. Add mushrooms and simmer again for 5 minutes.
    7. Add garlic and keep on a low simmer for the remaining 5 minutes.
    8. Strain spaghetti and serve with sauce on top and grated cheese if desired.
