Baked Sweet Potato Wedges

    Baked sweet potato or kumara wedges flavoured with paprika make a great change from regular potatoes.

    Serves: 4 

    • 1 tablespoon olive oil
    • 1/2 teaspoon paprika
    • 6 medium sweet potatoes, sliced lengthwise into quarters

    Preparation:5min  ›  Cook:40min  ›  Ready in:45min 

    1. Preheat oven to 200 degrees C. Lightly grease a baking tray, or line with baking paper.
    2. In a large bowl, mix olive oil and paprika. Add sweet potato, and toss to coat. Place on the prepared baking tray.
    3. Bake in preheated oven for 40 minutes until golden.

    These are very easy to bake but how do I get mine to be crispy?  -  13 Aug 2012


    I used only two sweet potatoes because there were only two of us, and I used about 2 tbsp of olive oil, salt and pepper (no paprika). I baked them at 200, but they were done long before the suggested time; it only took about 20 minutes to cook them.  -  18 Jul 2008


    Used different ingredients. We liked them better when the sticks were cut thinner. They had a better flavour. We also cut up a regular baking potato and cooked it with the sweet potato.  -  18 Jul 2008
