Bacon Fried Rice

    This is a very quick and easy fried rice that uses bacon, it can be a quick lunch or dinner but I more commonly use it as a side dish.

    Serves: 4 

    • 4 rashers bacon
    • 3 eggs
    • 4 tablespoons oil
    • 4 cups (1 litre) cold cooked rice
    • 4 tablespoons soy sauce
    • 1/2 teaspoon salt
    • 1/2 cup shallots

    1. Fry bacon very crispy then drain and cut into small strips. Set aside.
    2. Whisk eggs until well mixed then scramble eggs in 1 teaspoon oil breaking into small pieces and set aside.
    3. Heat rest of oil (3 tablespoons) and add the rice then all the soy sauce. Mix well.
    4. Add the salt, shallots, bacon and eggs then combine well. When warm all through serve.
