Coriander Vegetables on Couscous

    This is a simple side dish or vegetarian main that has vegetables served in a tomato and coriander sauce served on couscous.

    Serves: 4 

    • 2 cloves garlic, crushed
    • 1/4 cup (60ml) olive oil
    • 1 teaspoon coriander seeds, crushed
    • 1 teaspoon sugar
    • 1/2 teaspoon salt
    • 1 (400g) tin tomatoes
    • 500g prepared vegetables e.g. beans, zucchini, carrots, cauliflower, etc.
    • 1 tablespoon lemon juice, fresh
    • 2 tablespoons wine vinegar
    • 1/4 cup parsley

    Preparation:25min  ›  Cook:15min  ›  Ready in:40min 

    1. Cook crushed garlic in olive oil, do not brown. Stir in crushed coriander seeds, sugar, salt and tomatoes.
    2. Add prepared vegtables then cover and simmer for 10-15 minutes turning vegetables after 5 minutes. Do not overcook vegetables it is best if they are still crisp.
    3. Sprinkle over lemon juice and vinegar then leave to cool.
    4. Serve vegetables on bed of plain couscous sprinkled with parsley.

    I used Eggplant, zucchini, carrot, capsicum and added pork to placate my carnivous family. Because of the eggplant it came out a bit like Ratatouille on cous cous Still tasty and easy though  -  18 Dec 2012
