Eggless Breakfast

    Simple Breakfast like an omelette but with the eggs substituted for Haloumi. Haloumi browns on the outside and doesn't melt allowing you to mix it with ingredients in the frying pan. Don’t be put off by its slightly rubbery texture it is supposed to be like that and the taste is well worth it.

    Serves: 2 

    • 1 dash olive oil
    • 4 rashes bacon, sliced
    • 6 tomatoes, cubed
    • 5 shallots, diced
    • 1 pinch salt and pepper, to taste
    • 1 block Haloumi (type of cheese from Cyprus), cubed

    Preparation:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Heat olive oil in a frypan then add bacon, tomatoes and shallots.
    2. Season with salt and pepper whilst cooking.
    3. Continue to cook until tomatoes are soft, bacon and shallots are browning.
    4. Add Haloumi and cook until it is brown on both sides then take off the heat and serve.
