I made this up one day when I bought a watermelon on special and didn't know what to do with it. It sounds unusual but it really works. It is great as a fresh starter or as an accompaniment to grilled fish or even a hot spicy curry to act as a cooler.
2 limes, juiced
1 red onion, thinly sliced
1/2 watermelon cut into bite size pieces
150g block of greek feta cheese, cubed
20 kalamata olives, pitted
2 tablespoons diced coriander
2 tablespoons diced flat parsley
2 tablespoons extra virgin olive oil
salt and pepper, to taste
1 teaspoon brown sugar, optional

Mix lime juice into the red onions and leave for 1/2 hour in the fridge. The onions will turn a vivid pink.
Add the watermelon, feta, olives, coriander, parsley and olive oil then mix well.
Taste and season with salt and pepper, if the lime juice makes the taste too sharp then add a little brown sugar to calm it down.
