Cheesy Curried Chicken Gnocci

    This is a beautiful recipe. Very creamy and filling. I found the ingredients unusual that is why I tried it. No one I've cooked it for doesn't like it.

    Serves: 4 

    • 1 tablespoons vegetable oil
    • 500g chicken breast fillet, cut into 3cm pieces
    • 1 onion, finely diced
    • 2 teaspoons crushed fresh garlic
    • 1-2 tablespoons curry powder
    • 2 1/4 cups (560ml) thickened cream
    • 1 cup grated (125ml) tasty cheese
    • 1/4 cup whole egg mayonnaise
    • 1/4 cup freshly diced parsley
    • 4 serves gnocci

    1. Heat oil in a medium sized saucepan then add chicken pieces, onion and garlic. Cook for 2-3 minutes over a moderate heat or until onion is soft and chicken is lightly browned.
    2. Add curry powder and cook for a further 30 seconds stirring to coat chicken.
    3. Stir through cream; allow to boil slightly then reduce heat and simmer for 10 minutes or until the sauce has reduced and thickened slightly.
    4. Stir in cheese, mayonnaise and parsley.
    5. Bring a large saucepan of water to boil then cook gnocci accord into packet instructions.
    6. Serve sauce on hot gnocci.
