Cinnamon Bread and Butter Pudding

    A traditional English dessert which is made by layering slices of buttered bread scattered with raisins and sultanas in an oven dish, over which an egg and milk mixture is poured. It is then baked in the oven and served.

    Serves: 6 

    • 8 slices white bread
    • softened butter
    • 3 eggs, lightly whisked
    • 1 litre full cream milk
    • 3/4 cup (185g) sugar
    • 1/4 teaspoon salt
    • 1 teaspoon vanilla essence
    • 140g raisins and/or sultanas
    • 1 teaspoons ground cinnamon
    • 1 teaspoon cinnamon sugar

    1. Preheat oven to 170 degrees C.
    2. Butter the sides of a large ovenproof baking dish.
    3. Break each piece of bread in half (into triangles). Butter one side of each of the slices of bread with a generous amount of butter.
    4. Line the bottom and sides of the dish with the bread buttered side up. Keep half of the bread for the top layer.
    5. In a large bowl combine the raisins and sultanas (keep a few for garnish), milk, whisked eggs, sugar, vanilla essence, ground cinnamon and salt.
    6. Pour the mixture over the bread in the bottom of the dish.
    7. Place the rest of the buttered bread on top then sprinkle the rest of the sultanas over the top. Sprinkle the cinnamon sugar evenly on the top of the bread as well.
    8. Allow to stand for 30 to 40 minutes.
    9. Cover the dish and place it in a water bath (a bigger ovenproof dish filled with about 5cm of water.) Bake for 30 minutes.
    10. Remove the lid and cook for another 30 minutes. Serve hot.
