Peanut Biscuits

    A wonderful recipe that the family goes crazy for! You may substitute the peanuts for choc-chips, cherries or anything!

    Serves: 8 

    • 110g butter
    • 3/4 cup (185g) sugar
    • 1 1/2 cups (185g) self raising flour
    • 1 egg
    • 1 teaspoon vanilla essence
    • 1/2 cup unsalted peanuts

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 200 degrees C.
    2. Melt the butter to liquid.
    3. Mix all the ingredients in a bowl until combined well.
    4. Roll into small balls and place on a pre-greased baking tray. Flatten with a knife.
    5. Bake for approximately 15 minutes or until golden brown.

    Just made these for the guys installing my new bathroom. Easy peasy to measure and mix - I love an all-in-one recipe. I used salted butter and added a pinch of salt to the mix too as the peanuts I used were raw and unsalted. With the amounts specified, the mix was a bit too dry to hold together as a ball, so I added a splash of milk to loosen it and all was well. they were soft inside and crisp outside and looked and tasted great!  -  06 Jun 2016
