The best potato salad I have had without mayonnaise. You simply can't stop eating it. The secret is the salt.


Serves: 4 

  • 400g red pontiac potatoes
  • 1/2 cucumber
  • 3 spring onions
  • 1/2 green capsicum
  • 5 rashers bacon, cooked, optional
  • 1 dash virgin olive oil
  • 1 dash white vinegar
  • fresh parsley, diced
  • salt, to taste

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. Boil potatoes until soft, drain and chill in fridge.
  2. Cut up cucumber, onion, capsicum and bacon then mix thoroughly until all combined.
  3. Pour on a small amount of vinegar and dribble extra virgin olive oil until potatoes well covered.
  4. Add fresh parsley and add salt to taste.
  5. Transfer to serving bowl to serve.
