This is a great recipe as an alternative to baked or roast potatoes. It produces fantastically crispy potatoes which are still soft inside!

Serves: 4 

  • 10-15 small washed potatoes
  • 4 tablespoons olive oil
  • 1 pinch salt and pepper, to taste

Preparation:20min  ›  Cook:1hour  ›  Ready in:1hour20min 

  1. Prick the potatoes and steam or boil until soft.
  2. Cool the potatoes.
  3. Place the potatoes and 2 tablespoons of oil in a roasting dish and roll the potatoes around in the oil until covered.
  4. With a potato masher press down on each potato crushing the potato but not completely mashing it.
  5. Season the potatoes with salt and pepper.
  6. Drizzle the remaining oil over the potatoes.
  7. Bake at 200 degrees C for 1 to 1.5 hours until the potatoes are very brown.

Great idea. Added a sprinkle of pepper steak seasoning on top for some added flavour. Family all approved. - 11 Jul 2013


These were pretty good, though they do take a loooooong time. I smished mine a bit too much, as they were too crispy. If I make them again, I'll definately smoosh a little less. I also don't recommend making this if it is close to 90 F outside. I like to add some herbs to give these a little kick: this time I used garlic and crushed red pepper. - 21 May 2013


Wasn't quit sure how these would turn out but I was pleasantly surprised when I tasted them. Make sure you don't smish them too flat. - 19 May 2013
