Bacon and Egg Pasta Salad

    A great dish to serve for a barbecue side dish or to take to a gathering. Quick and easy to put together it can be made a day ahead.

    Serves: 4 

    • 12 hardboiled eggs
    • 4 slices bacon
    • 1/2 onion, finely diced
    • 2 teaspoons crushed garlic
    • 250g pasta shapes (spirals, twists, shells)
    • 300g mayonnaise

    1. Cook pasta shapes to packet directions.
    2. Peel and cut eggs into rough quarters or smaller pieces if desired.
    3. Fry bacon then remove and pat dry on paper towels. Chop roughly.
    4. Using the bacon fat, cook onion and garlic together until soft and cooked through. Drain.
    5. Put everything together in a large bowl and mix thoroughly with the mayonnaise.
    6. Refrigerate until thoroughly chilled.
