This salad goes nicely alongside roasted meat or chicken. It is simple to make with ingredients that are often in your fridge.


Serves: 4 

  • 4 carrots, grated
  • 1 head lettuce, lettuce leaves torn into bite size pieces
  • 1 teaspoon salt
  • 1/2 cup (125ml) lemon juice
  • 4 tablespoons extra-virgin olive oil

  1. In a bowl mix carrot and lettuce leaves, add salt and mix again.
  2. Add lemon juice and mix.
  3. Spoon olive oil over then mix.
  4. Best served straight after preparation while lettuce leaves are still crispy.
