This is a cake that you can make with just ingredients from your cupboard (ok, and milk from the fridge). It is super easy and a great standby option when people drop by.


Serves: 8 

  • 3 cups (375g) plain flour
  • 5 tablespoons cocoa
  • 2 teaspoons bicarbonate soda
  • 2 cups (340g) brown sugar
  • 2 tablespoons vinegar
  • 2 cups (500ml) milk
  • 1/4 cup (60ml) water

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. In a bowl add the brown sugar, vinegar, milk and water.
  2. Sift the flour, cocoa and bicarb soda into the bowl.
  3. Mix it with an electric mixer then pour it into a prepared cake tin; a 23cm square tin works well.
  4. Cook for about 30 minutes at 180 degrees C or until a cake tester/skewer comes out pretty clean.

I didn't have cocoa powder so used same amount of dessicated coconut and threw in some choc chips for fun - needed more than 30mins cooking - check it carefully. It turned out really yummy though - quite pudding-ish rather than traditional cake texture. I really liked it and so did my husband. A good one for when you start getting out the ingredients and then realise you have no eggs! (oops, now I have to find one for when I have no milk ) - 16 Aug 2011
