Meatballs with Garlic and Vegetable Sauce

This is a super simple and cheap family dinner that I frequently make, sometimes I use chilli tomato paste and/or 4 bean mix. The kids love it.


Serves: 4 

  • 400g beef mince
  • 1 teaspoon paprika
  • 1 egg, lightly whisked
  • 1 medium brown onion, finely diced
  • 3 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 3 cloves garlic, crushed
  • 2 medium carrots, sliced and quartered
  • 2 (400g) tins crushed tomatoes
  • 1 large zucchini, sliced and quartered
  • 1 large jar garlic pasta sauce
  • 1 (400g) tin bortolli beans
  • 250g pasta noodles, any type

  1. Combine mince, paprika, egg, half of the onion and 1 tablespoon of the tomato paste in medium bowl. Combine well then roll tablespoons of mixture into balls.
  2. Heat oil in large saucepan then cook meatballs in batches until browned.
  3. Cook garlic and remaining onion in same saucepan stirring until the onion softens.
  4. Add carrots and cook stirring until they are just tender.
  5. Add remaining tomato paste to saucepan. Cook stirring for 1 minute.
  6. Add undrained tomatoes and tomato pasta sauce then bring to a boil.
  7. Add zucchini, beans and meatballs; return to a boil.
  8. Reduce heat then simmer covered for about 15 minutes or until it is a nice thick sauce.
  9. Serve with any choice of pasta and some cheese.
