Very Easy Leek and Potato Soup

    This hearty and delicious soup recipe was given to me by my best friend after she made it for us at dinner and even my fussy 4 year old requested more. The bacon stock puts a flavoursome twist on the traditional recipe.

    Serves: 4 

    • 1 large leek, sliced
    • 30g butter
    • 750g potatoes, peeled and cubed
    • 4 cups (1 litre) bacon stock
    • 1/2 cup (125ml) cream

    1. Sauté leek in the butter for 3 minutes.
    2. Add potato and coat with the sautéed leek.
    3. Slowly pour in the stock and stir to combine.
    4. Simmer for 30 minutes or until potatoes are cooked.
    5. Use a hand-held blender to blend the soup until smooth.
    6. Put back onto low heat and add the cream.
    7. If the soup becomes too thick more stock may be added.
    8. Serve with crusty bread or rolls and enjoy a hearty and healthy meal.
