Easy Chicken and Rosemary Stew

    This is a very simple stove top, one pot chicken casserole type dish, that tastes fantastic and the whole family will enjoy.

    Serves: 4 

    • 4-6 chicken thighs
    • 1/2 cup (60g) plain flour
    • 2 tablespoons olive oil
    • 1 large onion, diced
    • 2 cloves garlic, crushed
    • 1 teaspoon diced rosemary
    • 1/2 cup (125ml) dry white wine
    • 2 cups (500ml) chicken stock
    • 1 tablespoon diced parsley
    • 1/2 cup (125ml) cream

    1. Cut chicken thighs into 2cm pieces then lightly coat in flour.
    2. Heat oil in large saucepan then lightly brown chicken then remove from saucepan.
    3. Add a little more oil over low heat, add onions, garlic and rosemary then stir for couple of minutes.
    4. Add wine, chicken and chicken stock just covering chicken. Bring to boil and simmer for 45 minutes with the lid on.
    5. Add parsley and cream then simmer for 15 minutes lid off. Serve over steamed rice.
