Spelt Sultana and Chocolate Biscuits

This sultana and chocolate chip biscuit uses spelt flour, you can probably use any type of dry fruit and any type of chocolate pieces.


Serves: 8 

  • 225g butter
  • 1 cup (220g) sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 1 cup (125g) white spelt flour
  • 1 1/3 cups wholemeal spelt flour
  • 1 cup (155g) sultanas
  • 1 cup chocolate bits

  1. Cream butter and sugar until light in colour. Add the eggs and beat well. Add vanilla essence.
  2. Sift baking powder and the flours then fold into the mixture.
  3. Add the sultanas and the chocolate bits.
  4. Drop tablespoon sized dough balls onto a lightly greased oven tray then cook at 150 degrees C for 16 minutes.
