Mexican Chicken Fillets

Chicken breast fillets smothered in taco sauce and topped with cheese and baked. A quick and easy meal that even my picky 2 year old enjoys. With only 4 ingredients it is a winner.


Serves: 4 

  • 2 large chicken breast fillets
  • 2 tablespoons cumin or mexican seasoning
  • 1 jar taco sauce
  • 2 cups grated cheese, tasty
  • oil, for frying

Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

  1. Preheat oven to 200 degrees.
  2. Place your hand over each chicken breast and slice through it cutting it in half longways.
  3. Rub each piece of chicken with cumin and set aside.
  4. Heat oil in a large frypan, when oil is hot add chicken and fry for no more than 3 minutes in total.
  5. Place the cooked chicken on a large swiss roll tin (the chicken should be browned but not cooked right through).
  6. Divide the taco sauce over each fillet and top with cheese.
  7. Bake for 10-15 minutes until the cheese is golden and bubbly.
  8. Serve with a simple salad and mexican rice.

this is similar to the salsa chicken on the main website. I prefer the salsa as opposed to the taco sauce - 05 May 2013
