    A delectably smooth slice of heavenly Tim Tam crunch smothered in caramel and crowned with melted chocolate. You can use plain biscuits for this if you wish. Cut into desired shapes to serve.

    Serves: 6 

    • 250g butter
    • 1½ cups vanilla ice cream
    • 1½ cups (220g) brown sugar
    • 1 packet of Tim Tams
    • 2 blocks of milk or dark chocolate, to your taste

    1. Grease a slice or lamington tin. Place all the biscuits from a packet of Tim Tams in a plastic bag and crunch up with rolling pin. Spread the crushed biscuits on the base of the tray.
    2. Melt the butter in a medium saucepan on medium heat, then add the brown sugar and ice-cream, simmer for 2 minutes. Pour this mixture over the crushed biscuit and refrigerate until firm.
    3. Melt the chocolate in the microwave or in a double boiler until runny, make sure you don’t burn it. Pour this over the refrigerated caramel and biscuit and spread evenly. Put in the refrigerator until chocolate has set.

    My caramel stayed gooey and wasn't firm.... also the chocolate was too thick so when i tried to cut the slice the pressure made the caramel come out the sides.  -  21 Oct 2009
