Peanut Butter Pudding with Spelt Flour

    This is a self saucing pudding that my family loves and I have adapted to spelt flour. Goes beautifully with ice cream or cream.

    Serves: 4 

    • 1 cup spelt white flour
    • 1/2 cup (90g) brown sugar
    • 2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1/2 cup (125ml) rice milk or soya milk
    • 1/3 cup crunchy peanut butter
    • 1 teaspoon vanilla essence
    • 2 tablespoons oil
    • 1/3 cup (60g) brown sugar
    • 1/2 teaspoon cinnamon
    • 1 1/2 cups (375ml) boiling water

    Preparation:15min  ›  Cook:50min  ›  Ready in:1hour5min 

    1. In a bowl stir together, flour, brown sugar, baking powder and salt.
    2. Add rice milk, crunchy peanut butter, vanilla essence and oil.
    3. Mix well then spread in a greased high sided baking dish.
    4. Sprinkle with brown sugar and cinnamon.
    5. Carefully pour 1 1/2 cups of boiling water over the top.
    6. Bake at 150 degrees C for 50 minutes as spelt takes a little longer to cook and needs to be cooked at a lower temperature.
